Recipe: Hazelnut Friand from Bistro Gentil

Just in time for your Christmas feast! Add something a little extra special to your holiday menu and try your hand at recreating a classic dessert from Bistro Gentil in Wanaka. Top the friand with your favourite seasonal fruit and serve alongside a scoop of PURE New Zealand Ice Cream


  • 150g eggs (3)

  • 100g sugar

  • 20g honey (we like to use our own from Tiaki Bees!)

  • 150g ground hazelnuts

  • 125g soft butter

  • 15ml Frangelico (optional)


  1. Preheat oven to 160ºC

  2. Whisk the eggs, sugar and honey in a mixing bowl

  3. Add the ground hazelnuts and Frangelico. Stir

  4. Add the soft butter and stir until uniform

  5. Pour into a buttered mould and bake for about 40 minutes

  6. Let the friand cool before removing from the mould
